„Magurská šoudra“ – cured pork leg

The title „šoudra“ has its origin in šariš-zemplin slang and means „Easter ham“. The highest quality pork legs are carefully chosen and marinated for several weeks in a special marinade that is based on mixture of salt and spices. The „šoudra“ is then smoked on a dry beechwood. Maturation and drying in ripening cellars completes the technological process of production of this regional specialty. The result is a lightly smoked and dried ham with a thin layer of bacon on the surface.
